Easy Peasy Peach Cobbler - also known as “a cup, a cup, a cup”


This dish is famous in my circle of friends and family. I cook it every year for our annual mountain girls retreat. It’s also a hit for family vacations. Even my picky daughter who does not like cooked fruit (she ain’t right), is a fan. So, get creative with this - It’s not a science - It’s more of an art. You know what you like. Do you like cinnamon and nutmeg? Then sprinkle some into your peaches when they are simmering. If not, leave it out - it’s just as good either way. Have fun with it - you can’t go wrong here.

Ingredients

  • 1 Cup of Sugar

  • 1 Cup of Self-Rising Flour

  • 1 Cup of Buttermilk

  • 1 Stick of Butter

  • Peaches - Don’t skimp here! About 5-6 fresh peaches

Instructions

  1. PREHEAT: Preheat oven to 350 degrees

  2. SIMMER: Simmer Peaches in about 1 cup of sugar about 10 minutes - Get creative here - add some cinnamon and nutmeg to taste, add about a teaspoon of vanilla

  3. MELT: While peaches are simmering, melt 1 stick of butter in a casserole dish

  4. MIX: Combine Buttermilk, Flour, and Sugar in a separate bowl and pour on top of the melted butter - DO NOT STIR

  5. Next pour Peaches on top - AGAIN… DO NOT STIR

  6. Bake for about 30 minutes or until the crust is brown on top and the peaches are bubbling (yum)

  7. Serve with Ice Cream for your picky, more demanding friends and family members. Some of us simple folk are good without the ice cream.
